The fantastic dinner that wasn't...

What I characterized as a "twist" on potatoes turned out to be not much more than baked potatoes with Parmesan sprinkled on top.

The recipe:
--6 tbsp. butter, melted
--3 tbsp. grated Parmesan cheese (I showered the potatoes in cheese)
--8 med. red potatoes, scrubbed and cut in half

Pour butter in pan and sprinkle Parmesan cheese over the melted butter. Place potatoes with cut side down over cheese. Bake at 400 degrees for 40 to 45 minutes or until tender.

It wasn't that the potatoes were bad. They just weren't mind-blowing good. I wouldn't discourage others from making the dish, but if you do, make sure you have a tasty main entree. The potatoes, by themselves, aren't good enough.

Brady, try this recipe...very easy and very tastey!

2 lbs small red potatoes (washed & quartered
1/4 cup olive oil
1 packet original Hidden Ranch dressing

Put oil in large ziplock bag, and add potatoes. Shake until well covered. Add H.R. dressing and shake again. Put in shallow pan (I line with aluminum foil) and bake at 375 degrees for approx. 45 minutes. Time and temp vary by oven.

You can also try:

6 red potatoes quartered
Olive oil
Rosemary (fresh or dried)
Garlic Salt & Pepper

Heat oven to 400 degrees
Place potatoes in a cake pan
Coat with olive oil
Sprinkle with Rosemary
Sprinkle with garlic salt and pepper
Bake until tender

They are fantastic! Especially with grilling!
